When Gnome 3 was released, I was able to modify the panels (among other things), thanks to viking's tips. I'm trying what is supposed to work in Gnome 3 on Mint, that being Alt+right-click to add things to the panels and to place them in another spot, etc.
I'm unable to do it with Alt+right click (it's not working). What do I do to add things to the panel, to move the panels, etc.?

Install Cinnamon; you will not be able to handle the Gnome3 panels like that.
Then you can log out and pick Cinnamon when you log in or you can do a ALT+F2 and write cinnamon --replace.
There you can place the panels with the cinnamon control panel. You can also drag fvourites from the menu to the panels and edit the menu by right-clicking.

On the Login screen you will have the Cinnamon option beneath the Userid and password prompt.

As you know I am not a Mint user so I was only assuming. It is like that in Arch!
You are left with F2 + cinnamon --replace then...
Or just start it from ~/.xinitrc

Oh, btw, I found this today purely by accident. It's in a bit different (and tucked away) place. Next to each user name (and it's hard to notice), there is a very small wheel that one clicks. There, are the desktops you can log into on Mint. Thank you, btw. I'm sure I wouldn't have found that even by accident if you hadn't mentioned this.
I had forgotten about Mate (even though I myself posted about it). It's another one that will do what I want it to do. So, now, we have the choice of two desktops that will give us Gnome 2 style.

No mate is not to bad. But there is an annoying delay on that menu. Cinnamon lets you drag icons from the menu to the panel and the right-click alacarte editing of the menu is back. The delay first time you use the menu is even worse there though. I use mate as a standard.
