I have been using ffmepeg a little lately in combination with gtk-recordMyDesktop. I make a nice tutorial while recording my desktop and convert it to avi with ffmpeg:

ffmpeg -i myfile.ogv myfile.avi

and Youtube here we come If you like GUI's you could install winff. It makes the conversion to avi (and other formats) easy.

Edit: Oh, btw, I put with the video info what I used to record that. gtkrecordmydesktop, and a couple other things (it's been a while, I don't remember the other things right off now).
